Salmon Fillets with Herb & Seaweed Crust

This recipe is nice and quick and adds a lovely zesty crunch to salmon or any other fish fillet. We would normally use white breadcrumbs but occasionally if there is some of our Irish Wholemeal Bread left over (which isn’t often !!) we would use this.

The curry powder adds a nice bit of warmth to the dish. You could use your favourite spice if you prefer.  There are no rules !!

IngredientsSONY DSC 

2           Salmon Fillets

50g      Breadcrumbs

¼tsp    Sage

¼ tsp   Thyme

½ tsp   Sea of Vitality Milled Dillisk

Zest of ½ a lemon

1½ tbsp Mayonnaise

½ tsp Curry Powder (optional)

 

Method

Preheat the oven to 200°C or Gas Mark 6

Place the Salmon Fillets in an ovenproof dish. Spread the mayonnaise over the fillets. Next combine all the other ingredients and sprinkle over the mayonnaise and pat down gently.

Bake for 18-20 minutes until the crust is golden brown.
